Loaded Taco Salad

Ingredients

  • 1 pound lean ground beef (85/15)
  • 2 tablespoons cooking oil
  • 2 teaspoons taco seasoning
  • 1 cup onion, diced
  • 1 clove garlic, minced
  • 4 cups iceberg lettuce, chopped
  • 1 cup black beans, drain, rinsed
  • 1 cup guacamole
  • 1/2 shredded cheese (Mexican blend)
  • I scallion, sliced
  • 2 radishes, sliced
  • 10 small petite tomatoes, sliced in half
  • 6 black olives, sliced
  • 1 cup roasted corn
  • 1 cup HATCH® Organic Salsa
  • 1 cup sour cream
  • Garnish: Lime wedge, cilantro leaves

Instructions

  1. In a medium saute pan add cooking oil and ground beef. Cook over medium-high heat.
  2. Then add taco seasoning, onion, and garlic. Mix well.
  3. Cook for about 8 – 10 minutes or until beef is cooked through.
  4. To make the dressing add sour cream and HATCH® salsa in a small mixing bowl. Mix well. Set aside until ready to dress the salad.
  5. Meanwhile plate lettuce in two large salad bowls.
  6. Once the beef is fully cooked. Add half over each salad.
  7. Then arrange tomatoes, cheese, radishes, corn, black beans, and black olives.
  8. Finally add dressing, guacamole, cilantro leaves, and lime wedge. Enjoy!
