Hatch® Green Chile Chicken Quesadillas

  • 4 Flour Tortillas
  • 2 cups shredded roast chicken
  • 1.5 cups shredded cheese
  • 1 (4 ounce) can HATCH® Diced Green Chile – drained


  1. Warm skillet over medium-high heat
  2. Add flour tortilla
  3. Sprinkle one cup of roasted chicken over the tortilla
  4. Sprinkle 3/4 cup shredded cheese over chicken
  5. Sprinkle 2 ounces of diced green chiles over the cheese
  6. Add flour tortilla
  7. Cook for three minutes or until lightly toasted
  8. Flip and cook the second side for three minutes
  9. Remove from pan and slice into 8 pieces (like a pizza)
  10. Serve with guacamole and sour cream!
