HATCH® Breakfast Red Chile Chilaquiles

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon taco seasoning
  • Blue Corn Tortilla Chips
  • 1 (15 ounce) can HATCH® Red Chile Enchilada Sauce
  • 8 ounces shredded Mexican cheese
  • 4 eggs, fried
  • Cilantro leaves for garnish


  1. In a large skillet saute over medium-high heat cook the ground beef with the onions, taco seasoning, and garlic.
  2. Mix well.
  3. Cook for about 20 minutes, mixing about every five minutes to break up the beef.
  4. Set cooked beef aside.
  5. In a small saute pan over medium heat add HATCH® Red Chile Enchilada Sauce and simmer until warm for about 10 minutes
  6. In a shallow bowl add blue corn tortilla chips, enough to cover the bottom of the dish.
  7. Layer with 1 cup of cooked ground beef.
  8. Then add about 1/4 cup of warm enchilada sauce.
  9. Sprinkle with cheese.
  10. Microwave for about 30 seconds on high to melt the cheese.
  11. Add fried egg and garnish with cilantro leaves.
  12. Enjoy!
