Green Chile Corn Beef Egg Muffins

Ingredients

  • 2 cans ( 4 ounce) HATCH® roasted and diced green chile peppers
  • 1 can ( 15 ounce) corn beef hash
  • 6 eggs beaten
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese
  • Diced avocado for garnish
  • Cilantro leaves for garnish
  • Chives for garnish
  • Cooking spray

Instructions

  1. Spray the muffin tin with cooking spray.
  2. Fill the muffin tin about halfway with corn beef hash.
  3. In a medium-size bowl beat eggs.
  4. Then add green chiles, salt, and cheddar cheese and mix again.
  5. Pour egg mixture over corn beef hash.
  6. Preheat oven to 400 degrees F.
  7. Bake until egg muffins are fully cooked about 18 – 20 minutes.
  8. Garnish with avocado, diced chives, and cilantro leaves.
  9. Serve two per person. Enjoy!
