Spicy Hatch® Green Chile Chicken Alfredo Pasta

Ingredients

1 pound cooked pasta (penne pasta, reserve one cup of hot pasta water for sauce)
2 cups shredded roasted chicken
2 tablespoons butter
1 onion, chopped
2 cloves garlic, minced
1 (4 ounce) can HATCH® Diced Green Chiles
1/2 cup Parmesan cheese divided equally in two 1/4 cup servings
2 (24 ounce) Prepared Alfredo Sauce

Instructions

In a small skillet add butter onion and garlic. Cook over medium-high heat for about 3-4 minutes or until the onion is cooked and translucent in color.
Cook penne pasta according to package directions, and reserve one cup of hot pasta water for the sauce.

In a large mixing bowl add cooked pasta, shredded roasted chicken, cooked onion and garlic, HATCH® Diced Green Chiles, two jars of Alfredo Sauce, one cup hot pasta water, and 1/4 cup parmesan cheese. Mix well.

Pour into a 9 x 13 casserole dish. Sprinkle remaining 1/4 cup parmesan cheese.

Place in preheated oven at 500 degrees/broil setting. Allow the casserole to slightly brown for about 3 – 5 minutes. Watch carefully to prevent burning.
