Hatch Green Chile Queso Blanco

1 can (10 ounces) HATCH diced tomatoes with green chiles

1 can (4 ounces) HATCH diced green chiles

½ teaspoon chipotle powder

½ teaspoon garlic powder

¼ teaspoon cayenne pepper

¼ teaspoon cumin

1 teaspoon corn startch

1 can (12 ounces) evaporated milk

2 lbs (freshly grated) white cheddar cheese (may substitute yellow cheddar cheese)


In a medium sauce pan over medium high heat add, HATCH tomatoes, and green chiles. Bring to slow boil.

Add spices and corn starch, mix well.

Then add the evaporated milk, continue to mix until combined. Bring to boil and reduce heat to low.

Add ½ the shredded cheddar cheese. Mix until smooth. Then add the remaining cheddar cheese. Mix until smooth and creamy.

Serve immediately with tortilla chips or your favorite veggies.



This is queso blanco made using white cheddar cheese. You may substitute yellow cheddar cheese. It is important to use freshly grated cheese to prevent separation.
