HATCH GREEN CHILE CHICKEN DIVAN

Ingredients

1/4 cup (1/2 of a 4oz can) Hatch Chopped Green Chiles
4 chicken breasts
1 small onion
2 carrots, peeled
1 celery stalk
2, 10oz. pkgs. frozen broccoli or 1 large bunch fresh broccoli
2 cans cream of chicken soup
1 cup mayonnaise
1 tsp. lemon juice
1/2 tsp. curry powder
1/2 cup sharp cheddar cheese, grated

Instructions

In a pot, cover chicken with water, salt, pepper. Add onion, carrots, and celery and simmer until meat is done, about an hour. Remove bones and skin. Cook broccoli to package directions or, if using fresh, cook in boiling salted water until tender. Drain. Arrange stalks in a greased baking dish and place a portion of chicken on top of each stalk for easy serving. Combine soup, mayonnaise, lemon juice, curry powder. and Chiles. Pour over chicken. Sprinkle with cheese and bake at 350 degrees for 30 minutes. Serves: 4
